Apple, Avocado and Spinach Salad

Salad Ingredients:

• 1 green apple, fine sliced
  
• 1 avocado, sliced
  
• pumpkin seeds
  
• fresh spinach
  

Vinaigrette Ingredients:

• 1 tbsp fresh squeezed lemon juice
  
• 3 tbsp olive oil
  
• 1 tsp Dijon mustard
  
• 1 tsp Agave nectar
  
• salt to taste
  

Directions: In a small bowl mix well all the vinaigrette ingredients. Layer the spinach, apples, avocado and pumpkin seeds. Toss them with the vinaigrette a few minutes before serving. Enjoy!
